Bill & Bobbie’s 7-grain sesame & sunflower bread

1 1/2 cup warm water491346_good_food
1 tps sea salt
3 tbls honey
6 tbls flaxseed meal or 2 tbls olive oil (extra virgin & cold pressed)
1/2 cup stoneground whole wheat flour
1/2 cup spelt flour 1/2 cup barley flour
1/2 cup millet flour 1/2 cup oat flour 1/2 cup rye flour 1/2 cup soy flour
1/3 + cup of gluten 2 + tps yeast

Place ingredients in bread machine and set for the 2 lb. cycle. 10 minutes before kneading cycle stops for the first rise; add 1/2 cup raw sesame seeds. 5 minutes later add 1/2 cup raw sunflower seed. This makes a very nutty flavored, heavy, nutritious, very high in fiber and wonderful bread. The recipe is flexible. If you know how to get it to rise better or bake it in the oven please let us rookies know.

Grandma’s Cinnamon Rolls for Breadmachine

Below is a recipe for an old family favorite passed down from my Grandmother to my mother. I modernized it somewhat to be able to use my bread machine. If you’d like the “traditional” recipe, email me back.

1 1/4 cups Waterfree-cinnamon_rolls_1
3 cups flour
2 Tbsp. Dry Milk
3 Tbsp. Sugar
1 tsp. salt
3 Tbsp. Butter
2 tsp. Yeast

Combine ingredients in bread machine and put through the entire dough cycle. Remove and roll out onto a flour surface in a rectangle shape. Melt 1/2 cup butter and pour enough of the melted butter into two pie plates enough to cover the bottom. Spread the rest of the melted butter onto the dough. Sprinkle brown sugar in each pie plate and over dough. Sprinkle cinnamon over dough. Roll up the dough length wise to make a long rope. Cut into 1 inch slices and place in pie plates. Cover and let rise about 2 hours. Bake in 350 degree oven till golden brown on top. Remove from oven and immediately invert pie plate on a sheet of wax paper. Cool. Serve warm with butter. Freezes very well.

Its hard to think of anything else that can beat the smell of freshly baked bread, so, enjoy these fabulous recipes.

Some are specifically for use with a Bread Maker, others you will “knead” some elbow grease, but the effort is more than worth it. The only frustrating thing, is that as soon as it comes out of the oven, hungry mouths scoff it down. As my mother used to say “Thirty minutes to prepare it, two minutes to eat it”

If you are guten intolerant, then there should be plenty of recipes for you here as well and if any of you have any of your own recipes that you would like to share with the whole world then please send either to bread@breadnet.net or the bread@theinfochief.com.

Bill & Bobbie’s Banana Bread

1/2 cup warm waterbananabread
1/4 cup honey
1 egg
1 cup whole wheat flour
1/2 cup millet flour
2 sliced bananas
1/3 cup sesame seeds
3 Tbl. gluten
4-1/2 Tbl. flaxseed meal
1 tps. sea salt
1 tps vanilla extract
1 cup bread flour
1/2 cup barley flour
2 tps. poppy seeds
1/3 cup sunflower seeds
2 tps. dry yeast

Can be baked on the 1-1/2 lb cycle.

Optional:
Up to 1 cup of any kind of seed/nut combination can be used, but care should be taked because the dough ball is heavy. That’s why only 2/3 cup of seeds is used here. The loaf rises to full-size in the bread pan and bakes fine.

Good & Simple French Bread

Here is a very simple, very good recipe for French bread; I’ve used it a 1000 times & it’s never failed, even with questionably-dated yeast.

Makes one 1 1/2 lb. loaffrench-bread

1 c. + 2 T. lukewarm water
1 t. lemon juice, fresh or bottled
1 1/2 T. olive oil
1 1/2 T. sugar
1 t. salt
3 1/2 c. flour
2 t. yeast
Bake on French Bread cycle. Can be baked on Instant Cycle by increasing yeast to 2 1/2 t. For an even tastier loaf, add a teaspoon of basil, oregano, marjoram, leaf sage, or tarragon.
