Ezra’s Whole Wheat Bread Machine Recipefree_brown_loaf-150x150

300 gms spring water
3 tbs, brown sugar or honey or date syrup
3 tbs. soya oil
1 1/2 teasponfuls salt
1 tbs dried milk
300 gms whole wheat
200 gms Stiebel No.2 bread flour, though ordinary white flour will do
8 gms dried yeast. ( I found that if your area has a locally produced yeast, this is preferable)

Add into the machine in order above, bake at Whole wheat settings, light crust. Can reduce water by 2-4 gms. Add additions of 30 gms of coarse crushed peanuts, rosemary, or any of many other items, after about 30-40 minutes after start.

Cyndi’s Sun-Dried Tomato Herb Bread

Here is a really good recipe for sundried tomato bread. Let me know what you think.
Since I don’t always have as much time as I would like, I let this mix on the “dough” setting on my bread machine, then punch down, and let rise again in the breadpan before baking.

2/3 Cup Buttermilk, room temperature.
1/4 Cup dried tomatos ( do not use oil packed, and use scissors to cut into small pieces)free-evening_platter-150x150

2Tbsps Olive oil
1/3 Cup warm water
1/4 Tsp salt
2 Tbsp Sugar, brown or white
3 cups bread flour ( can sub one cup wheat, but remember to add 1/2 Tsp wheat germ)
1/2 Tsp Tarragon
1/2 Tsp Basil
1/2 Tsp Oregano
1 Tsp Bread machine yeast

Add to bread machine in order by directions of bread machine. Remember to check dough after 3 – 4 minutes to make sure dough is mixing properly. After bread machine cycle is completed, punch down, place in oiled breadpan, cover and let rise until doubled. Bake in 350 degree oven 25 – 30 minutes, depending on how brown you like your crust. This is the bread to use for BLT’s, nothing can beat it.

Polenta Wholemeal Bread – Machine Recipe

This recipe is for a Panasonic which uses the smaller pan. The polenta gives the bread a coarse texture and nutty taste. The bran keeps the insides working. This recipe can also be used as a base recipe for cheese bread, fruit loaf etc.800210_healthy_bread

Use the wholemeal cycle.

2 teaspoons yeast
1/2 teaspoon sugar
1/2 teaspoon salt
30 grams gluten flour
70 grams plain white flour
200 grams wholemeal flour
3 desert spoons polenta
5 desert spoons bran ( I mix 1/2 out bran and 1/2 wheat bran )
1 heaped tespoon butter or margarine
265 ccs water

Banana & Mango Bread

I adapted this recipe from one in my Black & Decker instruction manual — the original recipe called for apple sauce and granola. Ingredients:

1 cup unsweetened apple juice (other varieties would no doubt also be tasty)banana mango
2 over ripe bananas
2 Tbsp. shortening
2 Tbsp. honey
1 cup whole wheat flour
3 1/2 cups bread flour
1/2 cup unsweetened rice crispies
1 tsp cinnamon
1 3/4 tsp bread machine yeast

About 1/2 cup roughly cut dried mangoes (scissors work very well)
Mash or hand blend apple juice with bananas Settings: sweet bread, light or dark crust Place ingredients into pan in order listed, except mangoes, press start. When machine beeps add mangoes.

Comments: I have discovered that if your bread appears to be rising too high, you can gently punch it down, thus avoiding a collision with the lid, you can do this several times. You can buy dried mangoes in asian food stores, health food stores or in the bulk section of a well-stocked grocery store.

Garlic cheese bread (unleavened)

2 cups unbleached flourhpim1816_cheese__onion_bread1-150x150
1 c. whole wheat flour
1/2 c. oatmeal
1/2 c. bran
1 tsp. salt
2 tbsps. of garlic powder
1/2 c. grated cheddar cheese (old)
1 c. water
1 c. of yogurt or sourdough starter
(I just let a cup of milk sit for two days at room temperature)
1 tbsp. of olive oil
1 tbsp. of demerra sugar

Mix above in bread machine (it is easier). When it has risen twice and is ready to bake, then I take it out and roll into :

pita bread
rolls or buns
scone shaped buns
tortilla’s
(Remember never to grease the pan for pita or tortilla’s, as it has to rise and bubble, pan must be fairly hot) Or you can leave in bread machine until it is baked and then thinly slice and serve…it is really nice toasted. no leaven for us yeast intolerant folk, you can also add 1 egg if you like it lighter.

Gluten-Free Mock Rye Bread (for Bread Machine)

Yield: 1 Loaf

1 1/2 c Brown rice flour

1/2 c Rice branfree_slice_of_rye_bread

1/2 c Tapioca flour

1/2 c Potato starch flour

1 tb Xanthan (or guar) gum

1 tb Caraway seeds

1/2 ts Salt

1/2 c Dry milk powder (non-instant)

1 tb Cocoa powder

1 ts Grated orange peel

2 ts Yeast

2 Eggs

3 tb Oil

1 tb Fruit sweetener

2 tb Molasses

1 1/2 c + 2 tablespoons water

1 ts Vinegar

Follow directions for your particular bread machine. Use single rise setting. Best made in small 1 lb bread machines. If you have a large 2 lb machine, you may have better results using the dough setting and baking in a conventional oven (in 8×4″ pan at 375 degrees for 50 to 60 minutes). Check after first 15 minutes. If top is sufficiently browned, cover with tin foil and continue baking. For ease in slicing try wrapping in a towel for about 4 hours after it is done baking, and slice with electric knife. This bread freezes well.

Farmhouse Buttermilk Bread – Gluten-free Bread Machine Recipe

I have used this recipe as a basic bread for a while, and didn’t yet see it on the site. Its tasty stuff, and usually turns out pretty good. Thanks to my mom (Mary Powers) for all the tweaking and research done to produce this.

Liquid Ingredients:free-white-bread

3 large eggs, lightly beaten

1/4 cup oil

1 1/4 cup + 1 tablespoon milk into which 4 tablespoons dry buttermilk has been dissolved.

Heat milk such that liquid mixture will end up at room temperature.

Dry Ingredients:

2 cups brown rice flour

1/2 cup potato starch flour

1/2 cup tapioca flour

3 1/2 teaspoons xanthan gum

1/4 cup sugar

1 1/2 teaspoons salt

2 1/4 teaspoons active dry yeast

Mix all liquid ingredients together and pour into breadmaker. Mix all dry ingredients, except yeast, together and spoon over top of liquid ingredients in breadmaker. Sprinkle yeast over dry ingredients, and avoid letting it touch the sides of the pan. On the Welbilt ABM3300, the settings are ‘Basic’, ‘Light’. I beleive this corresponds to your basic loaf settings on most machines. After bread is done, do not remove from pan until any ‘Stay Warm’ cycle is finished and the bread has cooled down.

Bill & Bobbie’s 7-grain sesame & sunflower bread

1 1/2 cup warm water491346_good_food
1 tps sea salt
3 tbls honey
6 tbls flaxseed meal or 2 tbls olive oil (extra virgin & cold pressed)
1/2 cup stoneground whole wheat flour
1/2 cup spelt flour 1/2 cup barley flour
1/2 cup millet flour 1/2 cup oat flour 1/2 cup rye flour 1/2 cup soy flour
1/3 + cup of gluten 2 + tps yeast

Place ingredients in bread machine and set for the 2 lb. cycle. 10 minutes before kneading cycle stops for the first rise; add 1/2 cup raw sesame seeds. 5 minutes later add 1/2 cup raw sunflower seed. This makes a very nutty flavored, heavy, nutritious, very high in fiber and wonderful bread. The recipe is flexible. If you know how to get it to rise better or bake it in the oven please let us rookies know.

Grandma’s Cinnamon Rolls for Breadmachine

Below is a recipe for an old family favorite passed down from my Grandmother to my mother. I modernized it somewhat to be able to use my bread machine. If you’d like the “traditional” recipe, email me back.

1 1/4 cups Waterfree-cinnamon_rolls_1
3 cups flour
2 Tbsp. Dry Milk
3 Tbsp. Sugar
1 tsp. salt
3 Tbsp. Butter
2 tsp. Yeast

Combine ingredients in bread machine and put through the entire dough cycle. Remove and roll out onto a flour surface in a rectangle shape. Melt 1/2 cup butter and pour enough of the melted butter into two pie plates enough to cover the bottom. Spread the rest of the melted butter onto the dough. Sprinkle brown sugar in each pie plate and over dough. Sprinkle cinnamon over dough. Roll up the dough length wise to make a long rope. Cut into 1 inch slices and place in pie plates. Cover and let rise about 2 hours. Bake in 350 degree oven till golden brown on top. Remove from oven and immediately invert pie plate on a sheet of wax paper. Cool. Serve warm with butter. Freezes very well.
